SERVES 12

  1. Preheat the oven to 450°F.
  2. Prepare baking sheet with a light coating of cooking spray.
  3. Sift together the flours, salt, sugar, baking powder, and baking soda.
  4. Stir in the thyme.
  5. Add the butter, and rub fat into the flour using your finger tips, so the mixture has the consistency of coarse cornmeal.
  6. Step #5, can also be done in a food processor fitted with the steel blade, using the pulse action.
  7. Stir the milk and yogurt (or buttermilk) into the mixture.
  8. Lightly flour your hands.
  9. Using your hands, bring the dough together until it forms a ball.
  10. Use care not to over kead the dough (as you would with bread) as that will result in hockey pucks not biscuits!
  11. The mixture will be slightly sticky, that's okay. Again, the less you work the dough, the lighter your biscuits will be.
  12. Roll out to a thickness of about 3/4 inch and cut into squares, triangles, or rounds.
  13. Place on the prepared baking sheet and bake for 12 to 15 minutes, until they're just lightly browned.
  14. Serve warm.
