  1. Toss apples with 1 tablespoon of the lemon juice.
  2. Remove long stems and wash spinach leaves with cold water.
  3. Dry excess water from leaves and place spinach in a large bowl.
  4. Whisk together remaining juice, olive oil, vinegar, agave nectar, salt and ground pepper to taste.
  5. Toss spinach with apples, Par-Cel, carrots and dressing.
  6. Top with walnuts.
  7. Serve immediately, so salad is fresh and crisp.

Another quick and easy recipe, that's full of flavor!  This is great as a starter or light meal.  Serve with warm crusty bread, or is delicious inside a whole-wheat wrap!
