 Serves: 4

  1. Cook bacon in a pan until crisp;  chop and cool.
  2. In a large salad bowl, place cabbage, fennel bulb, fennel fronds, scallions, walnuts and sunflower seeds.
  3. Mix together.
  4. in a small bowl, whisk together mayonnaise, salt and pepper, sugar and red wine vinegar.
  5. Add mayonnaise dressing to the salad mixture and toss until thoroughly until combined.
  6. Serve with your favourite dish!

This Slaw can sit in a fridge and let the flavors meld, or serve straight away.
