  1. Wash the spinach thoroughly and remove the long stems.
  2. Cook the spinach in very little water in a covered pan for 5 mins, then drain and chop.
  3. Heat the olive oil over a medium to low heat and add the finely sliced garlic, sultanas and pine nuts.
  4. Fry gently for 2 - 3 minutes, stirring all the time so that the pine nuts brown but do not burn.
  5. Add to the spinach.
  6. Mix all ingredients together and season with salt and pepper.
  7. Sprinkle 1 tablespoon of chopped parsely over the top of each serving.
  8. Serve straight away, for best flavor.

This dish is so easy and quick to make, and has a lovely flavor with different textures.
